Iwak Arumery is a double-distilled blend of three different kinds of pure fermented palm sap infused with exotic fruits and spices, aged for 1.5 years to perfection. It is a distillation of the childhood memories and experience of Ida Ayu Puspa Eny (Puspa), a female Brahman former journalist who had spent her life travelling the world and lived a good portion of her life in three different continents. Combining a technique commonly found in European colonies with the legendary “Arak Jung” from Bali, Puspa has spent 14 years innovating the tradition she holds dear into a unique offering that has become the embryo of Iwak Arumery, the Drinkers’ Drink.

Iwak’s journey to excellence began in the selection of our raw material. Blending 3 different types of palm saps from different parts of Bali (Borassus flabellifer, Cocos nucifera, and Arenga pinnata), Iwak Arumery offers a unique taste profile that represents the best the island has to offer.

These exotic and elusive palm saps are found exclusively in Southeast Asia; they are rare commodities that require patience and perseverance to produce. It takes at least 6 to 12 years for a palm plant to mature and produce the flowers from which the sap is extracted. This lengthy process, combined with the limited availability of suitable palm species, results in a scarcity of this exquisite ingredient.

Our Process

After years of research and development, Puspa has perfected a distillation method that can yield the optimal balance of flavor and purity by determining the right cut that obtains the smoothness and richness of the hearts, while leaving the impurities carried by the heads and the tails of the distillation process. This blend of distilled palm saps is then rested for 12 months to achieve the coveted smoothness we all come to love.

PHASE 1 : TAP

First, we tap the sap from palm flowers that took 6-12 years to mature.

PHASE 2 : FERMENT

Iwak Arumery is made from the fermentation of 3 different palm saps, an exotic material still unknown to most of the Western world.

PHASE 3 : DISTILL

Each individual palm sap is then distilled twice to achieve the desired alcohol content, cutting the head and the tail to achieve the layers of complexity we are known for.

PHASE 4 : BLEND

The resulting distillation is then blended and rested for 12 months using a special mellowing process.

PHASE 5 : INFUSE

Iwak Arumery is infused with a secret blend of spices and fruits before being rested for another 6 months before being bottled and delivered to connoisseurs like you.
