Unlike most alcoholic drink materials, palm trees take between 6-14 years to blossom and ready for harvest. Having extremely limited yield, palm sap is probably one of the rarest materials used for alcoholic beverages

Ida Ayu Puspa Eny (Dayu) took the word Master Blender to another whole new level. Iwak’s journey to excellence began in the selection of our raw material. Blending 3 different types of palm saps from different parts of Bali (Borassus flabellifer, Cocos nucifera, and Arenga pinnata), Iwak Arumery offers a unique taste profile that represents the best the island has to offer. These exotic and elusive palm saps found exclusively in South East Asia and are a rare commodity that requires patience and dedication to produce. It takes at least 6-12 years for a palm plant to mature and produce the flowers from which the sap is extracted. This lengthy process, combined with the limited availability of suitable palm species, results in a scarcity of this exquisite ingredient. Unlike any other alcohol in the world, this raw material is unmatched in its singular refinement, complexity, and depth of flavor. The rarity of these palm saps has been compared to that of tequila, which is derived from the agave plant that also takes years to mature.
